This is what i do:
1. create a My Documents folder on a 2nd partition.
2. change the path of my server My Document (the one on the desktop) to the My document folder in the 2nd partition.
3. share my server's My Document as "read and write"

on the clients, i change the path of My Documents to the server's My Document folder location. just copy the location that shows up when you navigate for the server's My Document in My Network Places.
note: don't move any existing folders on your clients! otherwise, you'll have multiple copies of My Pictures, My Music, etc., in your My Documents folder.
5. in your office applications, change the autosave location to the new My Document folder location. you'll find that the default already is changed to the new location. ^^
6. now you can freeze your C drive (even on your server) and still have recovery functions on your office apps in case of power failures or hang ups. just don't save anything on the desktop as these will be gone upon restart.
